Mountain Views, Absolute Relaxation & Delicious Organic Meals

After spending a week in the Dolomites, we headed back south. But we weren’t really to leave the scenic views yet. We spent two wonderful nights at Solea Boutique & Spa Hotel and had a very unique experience. 

The Location

Driving down from highway A22, we started heading up the winding roads into the mountain village of Fai della Paganella. We noticed many trailheads and cable cars nearby. The hotel offered free parking both indoor and outdoor. Our arrival was greeted with a warm welcome at the reception desk, directing us to simply drop off our bags and enjoy a welcome drink on the terrace. 

Upon arrival, it was cloudy and rainy, so we weren’t able to see all of the stunning mountain views, but once it cleared up, we were blown away. 

The Room

From the moment we entered the room, we fell in love with its view. A large window and a balcony made for a perfect sunrise experience. 

The room was sleek and stylish with unique lighting and storage options. We really liked that there were large shelves and a space to hang things out of the way. Despite being somewhat small for us since we had traveled for three weeks with quite large suitcases, it would have been an excellent choice for couples traveling with only carry-on luggage. Solea also offers much larger rooms and best of all; they even accommodate dogs! 

The bathroom felt spacious with elegant full-size amenities made in-house. A spacious vanity provided ample room to get ready for the day, as well as under-the-counter storage.

The Food

Solea Boutique has introduced a new all-inclusive concept for their new season after reopening from the pandemic. All drinks and food are included as well as access to their amazing spa. For our stay, we had designated seating for breakfast and dinner. The table was ours. Both the food and drinks were some of the best we had in the entirety of our Italy trip. Their bartender was incredibly talented with the cocktails he made. Every drink was made with such care and artistry. We enjoyed some of the best cocktails on the terrace while watching the sunset. 

Breakfast was both a mix of a la carte and buffet. We had made-to-order eggs and crepes each morning as well as fresh organic bread as well as a large Nutella pump and honey straight from the hive, as well as soft Malga butter. There was even a juicing station where we could cut up fresh vegetables and fruits and use their juicer on our own. 

At lunch, we had lighter options such as fish and meat grilled on the grill with fresh salads and homemade dressings. 

Dinner was insanely good with a different theme each night. There was also a selection of wines that could be paired with the dishes, and unlimited prosecco. Our first night was buffet-style of local Trentino foods with a fresh mushroom pasta station as well as unique foods like deer stew. There was also a large selection of delicious meats, grilled fish and cheeses. 

Our second-night dinner was our favorite. A full four-course Italian dinner that we were able to select from a set menu or pick its alternate. We enjoyed every bite! Every course had an excellent presentation. All the dishes were from locally sourced organic products. We had sea bream, duck breast, cannelloni, mango ice cream roll with mozzarella, and more.  It was definitely a meal to remember! 

The Spa

Our room came equipped with a large tote bag with the most fluffy and cozy robes and slippers to be used at the spa. We were tempted to buy them at their store, but had no more room in our luggage for large robes. Our afternoons were spent relaxing. They had a large indoor/outdoor heated pool and three saunas at different temperatures

We loved their relaxation room which had many types of lounge chairs with an amazing view of their garden. The suspended chairs were so comfortable we fell asleep on them immediately. It was a wonderful place to relax and ease sore muscles after all the hiking from the previous days. 

To sum up, Solea Boutique & Spa Hotel was a very memorable stay. From their welcoming and talented staff to their incredible organic foods and their comforting spa; we thoroughly enjoyed our stay. It was the most relaxed we’d been and helped us get ready to go back south to the hustle and bustle of Florence and Rome. We didn’t want to leave!
